Growing up in the South of France, Chef Eric Damidot discovered his passion for cooking at an early age. After completing culinary school, an apprenticeship and a stint in the military, he quickly rose up through the ranks. From Pastry Chef to Executive Chef, Damidot has experienced it all while working in the kitchens of The Ritz-Carlton, Bellagio, and Caesars Palace in the United States to Le Palais de la Méditerranée in France, and back again. Now, as Executive Chef, Eric Damidot brings his passion for the culinary arts to Hyatt Regency New Orleans.
