Dickie Brennan’s Steakhouse, Palace Café and Bourbon House

Chef Darin’s first professional experience came at Commander’s Palace under Executive Chef Jamie Shannon. In 1997, Darin joined Dickie Brennan at Palace Café and in August of 2007, he assumed the position as Executive Chef of Bourbon House, in addition to his role at Palace Café. He now holds the title of Executive Chef at Palace Café, Bourbon House and Dickie Brennan’s Steakhouse. As a mentor, Darin attracts serious culinary students from around the world. Under Darin’s direction, local ingredients are used to create seasonal, contemporary and classic Creole dishes with great depth of flavor. He has been a featured chef at the revered James Beard House, the world renowned Cal-A-Vie Spa in Vista, CA and has appeared on the Today Show.
